Happy Wednesday everyone! This week has been so much fun! Our ten-year old niece Stella has been staying with us and we’ve been cooking and gardening together, and yesterday we spent the evening overlooking the city at the Griffith Observatory. Today we made these unbelievably delicious balsamic spiced mixed nuts roasted with cayenne, curry, garlic, and brown sugar, adapted from the lovely Asha @foodfashionparty to take with us to snack on while we continue our adventures at the Aquarium!
Curry Balsamic Spiced Nuts

1 cup cashews
1 cup walnuts
1 cup almonds
1/2 teaspoon curry powder
1/2 teaspoon cayenne pepper
3/4 teaspoon salt
2 tablespoons balsamic vinegar
2 tablespoons vegetable oil or melted butter
2 teaspoons brown sugar
Preheat oven to 325F. Line a baking sheet with parchment paper, and set aside.
In a bowl, toss the nuts with the curry powder, cayenne, and salt. Add the vinegar, oil, and brown sugar, and toss until evenly coated. Pour mixture onto the prepared baking sheet, and bake for 15 to 20 minutes, tossing the nuts halfway through. Let cool completely before placing in a container. Enjoy!
