One question we are often asked is how we stay so skinny. We may share lots of desserts here on the blog, but we also try to keep the recipes balanced between the sweet autumnal cocktails and cookies that continue to make appearances in our somewhat-balanced household. All kidding aside, it is a combination of factors: heredity (you should see how thin our moms are), hiking, and taking time to eat healthy. Our dinners for the past few months have consisted of mountains of roasted vegetables, sautéed greens, quinoa, and tofu prepared a hundred and sixteen ways. We have been extra creative in the kitchen, experimenting with different techniques to prepare our produce and we have been thrilled with the results. The only downside is it can take a while: when you’re in a hurry and don’t have time to cut and peel loads of sweet potatoes and beets then wait a half-hour while they cook in the oven, you need a quicker—but still healthy—alternative. So we created a delicious and easy weeknight dinner that takes less than fifteen minutes from start to finish, and we’re excited to share it with you today.
This one-pan meal is almost too good to be true. There’s no slicing, dicing, cutting, chopping, or peeling of any vegetables, and everything comes together in minutes. We partnered with Taylor Farms to create a recipe using their Ginger Garlic Stir Fry Kit, and came up with something fresh and easy using just six extra ingredients. If you’ve ever been to PF Changs, then you must know about their mouthwatering lettuce wraps: they are the highlight of the menu, and those light and tasty appetizers were the spark of inspiration for this zesty Asian dish.
You’re in for a treat. This convenient stir fry kit is a fresh blend of kale, broccoli, brussels sprouts, bok choy, cabbage, snow peas, and carrots. Once sautéed in the flavorful ginger garlic sauce that’s included with the kit, we then add small bits of spicy tofu cooked in soy sauce, more ginger and garlic, red pepper flakes, and sesame oil. This savory, sweet, and spicy mixture is then added to crisp cups of lettuce, creating an Asian-inspired taco that is tangy and deliciously unexpected. Garnished with a drizzle of sriracha hot sauce and enjoyed with a cool beverage, your relaxing dinner plans await. And don’t worry, you can still have cake for dessert.
Stir-Fry Veggie Lettuce Wraps with Ginger-Garlic Tofu
serves 2 to 3
1/4 cup (59ml) soy sauce or tamari
1/2 teaspoon ground ginger
1/4 teaspoon garlic powder
1/4 teaspoon red pepper flakes
1/2 teaspoon sesame oil
7 ounces (198g) extra-firm tofu, diced into 1/4-inch cubes
2 tablespoons vegetable oil, divided
1 Taylor Farms Ginger Garlic Stir Fry Kit, sauce separated and set aside
1 head of iceberg lettuce, leaves separated
sriracha hot sauce for garnish, if desired
In a medium bowl, whisk together the soy sauce, ginger, garlic, red pepper flakes, and sesame oil. Add the tofu and toss to coat evenly. Set the bowl aside.
Heat a wok or large deep skillet over medium-high heat. Add 1 tablespoon of vegetable oil and when hot, add the tofu and any marinade remaining in the bowl. Cook 5 to 7 minutes, stirring occasionally. Carefully transfer the tofu back to the bowl to stay warm, then return the empty skillet to heat. Add the remaining tablespoon of vegetable oil and when hot, add the vegetables from the Stir Fry Kit. Cook, stirring occasionally, until the vegetables are tender, 5 to 6 minutes. Add the sauce packet from the Stir Fry Kit and toss to coat the vegetables evenly. Add the tofu, toss to combine, and remove from heat.
To serve, select a cup-shaped leaf from the head of iceberg lettuce. Scoop several spoonfuls of sautéed vegetables and tofu into the lettuce cup, making a mini taco shape. Repeat with the remaining lettuce cups and sautéed veggies. Serve hot, with sriracha hot sauce for garnish if desired, and enjoy!

— Tamari is a type of soy sauce made without wheat, so it’s a great gluten-free option. It’s available in many grocery stores, on the same shelf as the soy sauce, and online.
